Hazelnut and Kale Salad

1 bunch large kale
1 avocado
1 lemon
1/4 block of cheddar cheese, shredded
2 green apples, peeled and chopped
hazelnut oil
chopped hazelnuts, optional
semi-hard boiled eggs, optional

Tear kale into pieces off of its stems. Slice one avocado and squeeze onto kale in a large mixing bowl. Working with clean hands, massage the avocado into the Kale until the kale begins to break down its waxy exterior. Squeeze one lemon over kale and toss. Top with shredded cheddar and apples. Drizzle hazelnut oil heavily over salad and season with salt and pepper.
It’s fabulous as is but you can add the hazelnuts and eggs if you want to take it to the next level!
*this salad is even good the next day!
