Roasted Beets

2 bunches (6-8) large beets, peeled and quartered

1/4 cup Stöger Pumpkin Seed Oil

1 tsp Kosher salt

Preheat oven to 375 degrees.  Combine beets, oil and salt in a bowl, toss well. Spread beets on a baking sheet and roast for approximately 30 minutes or until beets are tender.  Season with more salt and fresh cracked pepper if desired.
