Salted Caramel Pumpkin Brittle

brittle“…and these are a few of my favorite things…” Yes, most things drenched in caramel and salt are delicious, but when it comes to adding pumpkin seeds it becomes irresistible! This buttery concoction is a fall favorite.

1/2 cup light corn syrup
1 cup white sugar
1/4 tsp table salt
1/4 cup water
1 1/2 cups Stöger Pumpkin Seeds
2 Tbsp butter
1 Tbsp Stöger Pumpkin Seed Oil
1 tsp baking soda
Kosher salt for sprinkling

Heavily grease a cookie sheet and set aside. Combine the sugar, corn syrup, salt and water in a saucepan and stir over medium heat until sugar is dissolved. Add Stöger Pumpkin Seeds and using a candy thermometer, bring to 300 degrees. Remove from heat and, working quickly, stir in butter, Stöger Pumpkin Seed Oil and baking soda. Spread onto cookie sheet and sprinkle with Kosher or Sea Salt. Cool completely and break into irregular pieces.

Warning: anything that uses Stöger Pumpkin Seeds and Stöger Pumpkin Seed Oil in the same recipe is known to be addicting
