Submitted by: Erin Headley Drizzle pumpkin seed oil over cubed vegetables such as potatoes, onions, carrots and beets. Season with salt and pepper and roast at 400 degrees for 1 hour or until vegetables are fork tender.
Steam green beans and drizzle hazelnut oil liberally.
Toss cauliflower with tomato seed oil and roast in the oven until tender and golden brown. Season with salt and pepper.
